Bio is a monocultivar obtained from raw material harvested strictly by hand in November and milled straight away, coming exclusively from organic farming .
The protagonist is the Coratina cultivar, queen of the Apulian territory.
The result is an oil with a medium-intense fruitiness, which has strong vegetal scents on the nose and is strong and persistent on the palate.
Tasting Notes:
Aroma: Intensely fruity with a great complexity, it releases aromas of winter grass, artichoke, almond and rocket.
Flavour: Smooth and complex, with a distinctive bitterness which develops into flavours of rocket and chicory, balanced by an ongoing spicy taste.
Best Pairings: first dishes - minestrone soups - red meat, grilled fish and of course bruschette.
