It is a type of oil produced with only olives of the Ascolana variety.
It is a variety with rather low yields, therefore a very precious and harmonious oil with a high polyphenol content, from which we obtain an oil with an unmistakable intense fruity flavour.

Aroma: medium intensity with green fruity tones of tomato, thistle and chicory
Flavour: balance between bitter and spicy gives fully harmonic sensations
Best Pairings: Boiled or grilled fish - Fish carpaccio - raw shellfish - delicate meats
